Shrimp in Chili and Peanut Adobo

  • 2 cloves garlic
  • 1/2 onions
  • 1/4 cups peanuts
  • 1 ancho chile, deveined, seedless, and soaked
  • 1 morita chile
  • 1 guajillo chile
  • 1 chipotle chile in adobo sauce
  • 1/4 cups apple cider vinegar
  • 1 lemon, just the juice
  • 3 cloves
  • 1 pinch cumin
  • 3 black peppercorns
  • 1 cup Del Fuerte® natural tomato purée
  • 4 cups shrimp, clean
  • 2 tablespoons butter

  • Blend the garlic, onion, peanut, chiles, vinegar, lemon juice, cumin, black pepper, and Puré de Tomate Natural del Fuerte® until it becomes a thick paste. Set aside.
  • In a bowl, add the cleaned shrimp, add the adobo, and mix to marinate.
  • Heat in a skillet over medium heat and add the butter, cook the shrimp gradually.
  • Serve with a little yellow lemon and white rice with vegetables.
