Shrimp Skewers with Mango Sauce

Delicious shrimp skewers. Perfect for this Lenten season.

  • 1 green bell pepper, cut into onion-sized pieces
  • 1 red onion, chopped into large pieces (about 1 cup)
  • 1/2 kilos shrimp, deveined and peeled
  • 1 1/2 cherry tomatoes, kids
  • spray oil, pam brand
  • 1/4 cups lime juice
  • 1/4 teaspoons pepper
  • 1/8 teaspoons salt
  • 1/2 mango chutney
  • 1/4 cups chives, chopped
  • 2 tablespoons soy sauce
  • 1/2 teaspoons garlic

  • Preheat the oven broiler. If you don’t have a broil setting, then set the oven to very high temperature.
  • On skewers (previously soaked to prevent burning), place half a tomato, one shrimp, a piece of onion, and bell peppers. Arrange the skewers to have plenty of shrimp and vegetables.
  • Place the skewers on a baking sheet (ideally with a rack).
  • Brush the skewers with 2 tablespoons of lime juice and sprinkle with salt and pepper.
  • Cook for 4 minutes, flipping once, or until the shrimp are cooked.
  • Mix the other 2 tablespoons of lime juice with the mango chutney and the rest of the ingredients. Mix well and serve this sauce with the shrimp.
