  • 3 tablespoons olive oil
  • 2 cloves garlic, chopped
  • 1/4 red onions, in julienne
  • 1/2 Habanero chiles, chopped
  • 12 medium-sized shrimp, cleaned, peeled
  • 3 slices canned pineapple, chopped
  • 1 shot Tequila
  • 2 tablespoons parsley, washed, disinfected, chopped
  • 1 pinch salt
  • 1 pinch pepper
  • 1 cup Manchego cheese, grated
  • 8 tortillas, taco maker

  • In a skillet, heat oil, garlic, onion, and chili. Add shrimp, pineapple, and tequila. Heat, flambé with great care, enhance the flavor with parsley, salt, and pepper, add Manchego cheese; warm the tortillas and form the tacos. Serve immediately.
