2 tablespoons garlic, finely chopped for the sauce
1/4 cups red onion, finely chopped for the sauce
1 cup tamarind concentrate, for the sauce
1/2 cups mayonnaise, for the sauce
1/2 cups chipotle chile, for the sauce
1/4 cups lime juice, for the sauce

For the filling, mix the cheeses with the garlic and cilantro in a bowl, season.
Fill the shrimp with the cheese mixture and wrap each one with bacon.
Heat a skillet over high heat, cook the shrimp until the bacon is crispy, drain on paper towels.
