Canapés with Garlic Mousse

The base is celery with garlic mousse and shrimp, accompanied by breaded fish roe and crispy eggplant.

  • 500 grams shrimp
  • 250 grams caviar
  • 2 eggplants
  • 5 cloves garlic
  • 4 lemon juice
  • 1/4 cups canola oil
  • 100 grams rice flour
  • 1 egg white
  • 5 sprigs celery

  • Season the shrimp with salt and pepper, sear them on both sides. Let them rest, in a skillet heat oil, season the fish roe and coat it in flour, fry for about 2 minutes on each side.
  • For the garlic mousse: put the garlic in the blender with salt (to taste), blend, then slowly pour in the oil and lemon one at a time, finally add the egg white. Continue blending until you achieve a mayonnaise-like consistency.
  • With the previously disinfected and chopped celery, add a bit of mousse and a shrimp.
