Costa Brava Casserole

  • 400 grams precooked rice
  • 3/4 liters fish broth, hot
  • 2 tomatoes, ripe
  • 1/2 cups oil
  • 1 onion
  • 4 cloves garlic
  • 2 red bell peppers, cooked
  • 1 pinch saffron
  • 8 medium-sized shrimp
  • 4 shrimp
  • 200 grams squid, in rings
  • 400 grams fish fillet , red snapper or bass
  • 8 mussels
  • 100 grams peas

  • In a paella pan or large skillet, heat the oil and fry the garlic, then remove it.
  • Then, sauté the tomato and onion in the same oil; add the squid and saffron, leaving them on the heat until the seafood is cooked; incorporate the pre-cooked rice.
  • With a spatula, stir the previous ingredients, and when they start to color, add the hot fish broth.
  • When it starts to boil, add the shrimp, prawns, mussels, clams, fish, peas, and season with salt and pepper; finally, place the bell peppers as a garnish on the surface.
  • Note: If you do not have a paella pan or deep skillet, you can use a clay pot and wooden spatula.
