  • 2 tablespoons butter
  • 1/2 cups onion, finely chopped
  • 2 tablespoons garlic, finely chopped
  • 1/2 cups green bell pepper, diced
  • 1/2 cups red bell pepper, diced
  • 1/4 cups corn kernels
  • 2 Habanero chiles, finely chopped
  • 2 cups pink shrimp
  • 1 package cream cheese
  • 2 tablespoons fresh cilantro

  • 500 grams puff pastry
  • egg, for glazing
  • Parmesan cheese

  • Preheat the oven to 200°C
  • Heat the butter in a skillet over medium heat and cook the onion along with the garlic. Add the peppers, corn kernels, habanero chili, shrimp, cream cheese, and cilantro. Cook for 5 minutes or until the cheese is completely melted and season to your liking. Cool.
  • On a floured surface, roll out the puff pastry to 3 mm thick and cut long triangles.
  • Place the triangles on a previously greased and floured baking sheet, forming a circle. Add the filling and wrap with the tips of the triangles to form a ring.
  • Glaze the ring with egg, sprinkle with parmesan cheese and cilantro.
  • Bake for 30 minutes or until the ring is golden brown.
  • Serve accompanied by a salad and a refreshing drink.
