This dish is a staple in Mexican cuisine, and I'm sure that if you haven't tried it, it will become one of your favorites. It has an intense flavor from 3 chiles that will captivate more than one.
Remove the veins and seeds if you want to reduce the spiciness of your dish. Soak the chiles in a bowl with boiling water.
Chop the tomatoes and add them to the blender. Blend them with the chiles, including the chipotle, onion, garlic clove, and a bit of the water used to rehydrate the chiles.
Pour this strained sauce into a pan with oil and let it cook until it changes color. Season to taste.
You can sauté the shrimp beforehand in butter and pour the sauce over them when serving, or cook them directly in the hot sauce. In any case, be careful not to overcook them.
