Jumbo Butterfly Shrimp

  • 500 grams jumbo shrimp
  • 4 dried árbol chiles
  • 5 cloves garlic, finely chopped
  • 3 tablespoons unsalted butter
  • 1 teaspoon mustard
  • 1 cup cream
  • 1/4 cups basil, chopped
  • 1 pinch fresh tarragon
  • 1 bunch chives

  • Cut the shrimp in butterfly style and clean them.
  • Sauté the chiles in butter for 2 minutes.
  • Add the chopped green onions and cook for 1 more minute.
  • Add the garlic and fry for 3 minutes.
  • Add the shrimp and cook until they turn pink.
  • Season and add the mustard, beat for 1 minute.
  • Add the cream and beat until thick. Finally, add basil and tarragon. Mix and serve.
