This marinated shrimp recipe is easy to prepare. The marinade is made with a mix of ancho chiles, guajillo chiles, and pasilla chiles. They also taste great served in tacos.
Clean the chiles. Remove the seeds and veins and place them in boiling water with a little vinegar. Let them sit for 2 minutes and drain. Repeat this step depending on how spicy you want them.
Wash the shrimp, devein them, and reserve the shells. Cook the shells with a little water, powdered broth, bay leaf, thyme, and a little oregano.
Blend the chiles with a little of the shrimp liquid, strain it, and fry it in the olive oil.
Grill the garlic and onion. Place them in a blender and add the chiles. Blend everything and season by adding more shrimp broth (if necessary) to achieve a sauce that is not too thick.
Put the chile sauce in a covered pot for 25 minutes. Add more shrimp broth if it gets dry. Season with thyme, oregano, salt, and pepper.
Fry the shrimp in a little olive oil and add them to the sauce for a few minutes.
Serve them accompanied by white rice.
