Potato and Shrimp Patties with Nopales

Try these delicious potato and shrimp patties with nopales in green sauce. They are ideal for Lent since they are super easy to prepare, economical, and yield a lot. Your family will love them.

  • 5 potatoes, cooked and peeled
  • 1/2 cups dried shrimp, ground
  • 1/2 cups Cotija cheese, grated
  • 2 eggs
  • 4 tablespoons breadcrumbs
  • 3 tablespoons vegetable oil
  • 3 cups nopal, cooked
  • 5 tomatillos
  • 1/4 onions
  • 1 Jalapeño chile
  • 1 serrano chile
  • 1/4 cups fresh cilantro
  • salt and pepper
  • 1 tablespoon vegetable oil

  • In a bowl, mash the potatoes until you get a puree, add the shrimp powder, cotija cheese, egg, breadcrumbs, and season with salt and pepper. Use a spoon to mix until all ingredients are combined.
  • Take a little of the mixture with your hands and form the patties, cook in a skillet with a little oil for a couple of minutes or until golden brown. Drain on paper towels and set aside.
  • For the green sauce, in a small pot with water, boil the tomatoes, onion, and chiles for about 10 minutes. Let cool slightly and blend without liquid until you obtain a sauce.
  • In a pot, heat the oil over medium heat and fry the sauce. Once it comes to a boil, cook for 10 minutes, add the nopales, season, and set aside.
  • On a plate, serve the green sauce with nopales and place the patties on top. Decorate with fresh cilantro leaves and enjoy.
