250 grams dried shrimp
3 eggs, separated (whites on one side, yolks on the other)
olive oil
salt
1 kilo romeritos
1 clove garlic, chopped
1 cup tomato, chopped
1 cup leek, chopped
1 cup marinara sauce
1 cup turkey broth
1 teaspoon cinnamon
2 tablespoons piquín chile
4 tablespoons cocoa powder, sugar-free

Wash and cook the romeritos, set aside to add to the mole.
Clean the shrimp by removing the head, legs, shell, and tail.
In a processor, chop the shrimp without pulverizing too much and set aside.
Beat the egg whites to stiff peaks and carefully incorporate the yolks one by one.
Sprinkle the shrimp with a spoon, gradually, over the beaten eggs and stir gently.
In a pan, heat a splash of oil.
Pour a tablespoon of shrimp into the oil and cook on both sides.
Combine chicken broth, cocoa, piquin chili, cinnamon, and marinara sauce and cook in a pan for 5 minutes. Add garlic, tomato, leek, and chicken broth.
Let everything boil until a thick consistency is achieved.
Add the romeritos to the mole and cook everything together until very hot and ready to serve to your guests.
