Shrimp and Fresh Pineapple Pico de Gallo

  • 500 grams shrimp, cleaned and cooked
  • 2 lemons, just the juice
  • 1/4 cups Italian dressing
  • 3 cups pineapple, finely chopped
  • 1 cup red bell pepper, finely chopped
  • 1/3 cups red onion, finely chopped
  • 2 serrano chiles, seedless, finely chopped
  • 1/4 cups fresh cilantro, chopped
  • saltine crackers, for serving

  • Mix the shrimp with half of the lime juice. Refrigerate for 30 min.; drain them.
  • Combine all the other ingredients in a large bowl. Add the shrimp; mix them a little.
  • Refrigerate for about 30 min. Serve them with the crackers.
