Shrimp Jalapeño Poppers

  • 32 large shrimp, raw, peeled, and deveined
  • 1/3 cups Italian dressing
  • 1/2 cups sour cream
  • 2 tablespoons fresh cilantro, finely chopped
  • 32 saltine crackers
  • 1 cup cheddar cheese
  • 11 slices bacon, cut into medium pieces
  • 4 Jalapeño chiles, cut into 8 slices

  • Mix the shrimp with the dressing. Marinate in the refrigerator for 30 min. Meanwhile, mix the cream and cilantro. Refrigerate until ready to use.
  • Preheat the grill to medium heat. Cut the cheese into slices, then cut them in half. Place a slice of cheese on each cookie.
  • Drain the shrimp and discard the marinade. Wrap each shrimp with a piece of bacon; thread them onto skewers. Grill for 10 min. or until the shrimp turn pink, turning them frequently. Meanwhile, place the cookie sheet covered with aluminum foil on the grill; grill the cookies for 2 min. Remove them from the grill. Let them rest covered for 1 to 2 min. or until the cheese is slightly melted.
  • Remove the shrimp from the skewers and place them on the cookies. Top them with the sour cream mixture and the jalapeños.
