12 corn tortillas, (fresh preferred)
1 romaine lettuce, chopped
1 onion, chopped
1 kilo medium-sized shrimp, peeled and deveined
4 tablespoons vegetable oil
1/4 cups chipotle chile, in sauce or puree
1 cup sour cream
2 cloves garlic
pepper
1 avocado, for serving

In a large skillet, heat the vegetable oil and sauté 1/2 chopped onion and the garlic for 4-5 minutes.
Cook the shrimp in the oil for about 2-3 minutes on each side.
Add the chipotle and cream to the skillet and mix well, cook for 5 more minutes or until the sauce starts to boil.
Season with salt and pepper.
Heat the tortillas on a griddle and assemble each taco by first adding a layer of shrimp, then a layer of chopped onion, and finally the lettuce.
