Green, White, and Red Tacos

Delicious chipotle shrimp tacos served with lettuce and onion to showcase the colors of independence.

  • 12 corn tortillas, (fresh preferred)
  • 1 romaine lettuce, chopped
  • 1 onion, chopped
  • 1 kilo medium-sized shrimp, peeled and deveined
  • 4 tablespoons vegetable oil
  • 1/4 cups chipotle chile, in sauce or puree
  • 1 cup sour cream
  • 2 cloves garlic
  • pepper
  • 1 avocado, for serving

  • In a large skillet, heat the vegetable oil and sauté 1/2 chopped onion and the garlic for 4-5 minutes.
  • Cook the shrimp in the oil for about 2-3 minutes on each side.
  • Add the chipotle and cream to the skillet and mix well, cook for 5 more minutes or until the sauce starts to boil.
  • Season with salt and pepper.
  • Heat the tortillas on a griddle and assemble each taco by first adding a layer of shrimp, then a layer of chopped onion, and finally the lettuce.
