Swiss Enchiladas with Shrimp

Enjoy these delicious Swiss enchiladas with a twist on the traditional recipe, made with shrimp. They are the classic Swiss enchiladas but with shrimp.

  • 300 grams tomatillo
  • 100 grams white onion
  • 50 grams garlic
  • 100 grams Jalapeño chile, green
  • fresh cilantro
  • 200 grams reduced-fat cream cheese
  • 4 corn tortillas
  • 200 grams Manchego cheese, grated
  • 150 grams shrimp, cut into 3
  • 1/2 onions, for the shrimp
  • 1 clove garlic, for the shrimp
  • 2 small boxes tomato , in cubes, for the shrimp
  • salt , to taste
  • pepper, to taste

  • Boil the tomato, garlic, onion, and jalapeños. Once cooked, blend them with cilantro and cream cheese.
  • Put a skillet with a little oil and add the onion, garlic, tomato, salt, and pepper.
  • Fry the tortillas for two minutes, once fried, fill them with shrimp and roll them up.
  • Place the tacos in a baking dish and pour the sauce over them, sprinkle the grated manchego cheese on top, and bake the dish until golden.
