Stuffed Cucumbers with Surimi

  • 250 grams surimi, in cubes
  • 3 cucumbers, peeled, halved, and seedless
  • 1/2 red onions, finely chopped
  • 150 milliliters lime juice
  • 2 tablespoons mustard
  • 4 tablespoons mayonnaise
  • 1 bunch cilantro, half finely chopped and the other half whole for decoration
  • chipotle chile in adobo sauce, finely chopped
  • 1 avocado, in julienne
  • salt and pepper

  • Peel the cucumbers and cut them in half lengthwise, then scoop out the seeds with a spoon to fill the cucumbers.
  • Add the surimi in cubes, red onion, lime juice, mayonnaise, mustard, cilantro, lime juice, salt, and pepper to a bowl.
  • Mix all the ingredients well and adjust the seasoning with salt, pepper, and chipotle to taste.
  • Fill the cucumbers well and finish with avocado and fresh cilantro.
  • Cut the stuffed cucumbers with surimi into portions as desired and serve.
