250 grams surimi, in cubes
3 cucumbers, peeled, halved, and seedless
1/2 red onions, finely chopped
150 milliliters lime juice
2 tablespoons mustard
4 tablespoons mayonnaise
1 bunch cilantro, half finely chopped and the other half whole for decoration
chipotle chile in adobo sauce, finely chopped
1 avocado, in julienne
salt and pepper

Peel the cucumbers and cut them in half lengthwise, then scoop out the seeds with a spoon to fill the cucumbers.
Add the surimi in cubes, red onion, lime juice, mayonnaise, mustard, cilantro, lime juice, salt, and pepper to a bowl.
Mix all the ingredients well and adjust the seasoning with salt, pepper, and chipotle to taste.
Fill the cucumbers well and finish with avocado and fresh cilantro.
Cut the stuffed cucumbers with surimi into portions as desired and serve.
