Tuna Croquettes with Peppers

  • Pam® Olive, extra virgin olive oil spray
  • 2 cans canned tuna in water
  • 4 teaspoons onion, finely chopped
  • 2 teaspoons garlic, chopped
  • 4 teaspoons parsley , finely chopped
  • 1 teaspoon mustard
  • 2 cups bread, ground
  • 4 eggs
  • 1/2 cups flour
  • 150 grams sour cream
  • 2 red bell peppers
  • 2 teaspoons onion, finely chopped
  • 2 teaspoons garlic, chopped
  • salt

  • Drain the water from the tuna and mix it in a bowl with the onion, garlic, parsley, mustard, add ¾ cup of bread crumbs, 2 eggs, and season with salt and pepper.
  • Form medium-sized balls with the mixture and set them aside.
  • Beat 2 eggs and roll the balls in flour, then in the beaten egg, and finally in the bread crumbs.
  • Spray each croquette with 2 shots of PAM® Olive and bake at 180°C until golden brown.
  • Roast the peppers, clean them, and peel them. Blend the cream with the peppers, onion, and garlic, and season with salt and pepper.
