Tuna in Escabeche

  • 1 kilo smoked tuna
  • 10 cloves garlic, cut
  • 4 carrots, grated
  • 1 cup Poblano chile strips
  • 4 onions, thinly sliced
  • 1 cup oil
  • 1 cup white vinegar
  • 10 leaves bay
  • oregano
  • salt and pepper

  • In a frying pan, add the vinegar and oil; when hot, add the carrot, onion, chili, garlic, and bay leaf, and sauté them.
  • Once sautéed, add the tuna, salt, and pepper and cook for 5 more minutes, then add the oregano with your hands.
  • Refrigerate for at least 6 hours.
