1 kilo smoked tuna
10 cloves garlic, cut
4 carrots, grated
1 cup Poblano chile strips
4 onions, thinly sliced
1 cup oil
1 cup white vinegar
10 leaves bay
oregano
salt and pepper

In a frying pan, add the vinegar and oil; when hot, add the carrot, onion, chili, garlic, and bay leaf, and sauté them.
Once sautéed, add the tuna, salt, and pepper and cook for 5 more minutes, then add the oregano with your hands.
Refrigerate for at least 6 hours.
