Tuna Patties with Amaranth

  • 100 grams canned tuna
  • 5 tablespoons amaranth
  • 1/2 lemons, just the juice
  • 1 egg white
  • salt and pepper
  • 1 teaspoon olive oil

  • Mix the tuna (well drained) with the amaranth.
  • Add lemon juice, egg white, salt, and pepper to taste.
  • Form small balls with the previous mixture and place them to brown in a pan with a teaspoon of olive oil.
  • Let them brown on both sides, drain on a paper towel, and serve.
