Roll out the puff pastry with a rolling pin until you have a square of approximately 24x24 cm. Fold the edges to create a border and seal with egg.
Sprinkle half of the cheese over the rectangle. Add the Dolores® premium tuna loin and place the tomato slices on top, brushing the tomatoes with the same oil from the tuna.
Cover with the remaining mozzarella cheese, season with salt and pepper. Brush the edges with egg for color.
