Macaroni with Tuna in Chipotle Sauce

  • 1 tablespoon salt
  • 1/4 cups sour cream, for the sauce
  • 3/4 cups mayonnaise, for the sauce
  • 2 cloves garlic, for the sauce
  • 1/4 onions, for the sauce
  • 1/2 cups chipotle chile in adobo sauce, for the sauce
  • 1 guajillo chile, cleaned and hydrated in hot water, for the sauce
  • 1/4 cream cheese, (47.5 g) for the sauce
  • 3 tablespoons butter
  • 1 tablespoon garlic, finely chopped
  • 1/4 onions, finely chopped
  • 2 cups canned tuna, drained
  • 1/4 cups tomato purée, natural
  • 1 cup Manchego cheese, grated
  • 1 cup asadero cheese, grated
  • 1 cup cheddar cheese, yellow
  • fresh oregano, Fresh, for garnish

  • Preheat the oven to 200° C.
  • Cook the macaroni in a pot with boiling water and salt according to the package instructions. Drain and set aside.
  • For the sauce, blend the cream with the mayonnaise, garlic, onion, chipotles, guajillo pepper, and cream cheese. Set aside.
  • Heat a deep pot over medium heat with the butter, cook the garlic, onion, tuna, and tomato puree, add the sauce, and cook for 5 minutes. Incorporate half of the cheeses and cook until melted, add the macaroni and mix, season with salt and pepper.
  • Pour the preparation into a baking dish, cover the dish with the rest of the cheeses.
  • Gratin in the oven until the cheeses melt, remove from the oven and garnish with oregano.
  • Serve and enjoy.
