For the tostadas: Place the tortillas on a flat plate and heat in the microwave for 2 minutes. After 2 minutes, flip the tortillas and heat for another 2 minutes, and you’re done!
Pour the achiote paste, orange juice, apple cider vinegar, garlic, oregano, salt, and pepper to taste into a blender. Blend for 2 minutes or until the ingredients are well combined. Set aside.
Empty the tuna into a bowl and pour the pibil sauce mixture over it, then mix well and let marinate for 6 minutes for better flavor penetration.
Heat the olive oil in a skillet over medium heat, pour in the tuna mixture, and cook for 3 minutes.
Serve the tuna tostada al pibil, decorate with pickled onion, and add lime juice.
