Tuna Tostadas al Pibil

  • 1/4 cups achiote, in paste
  • 1 cup orange juice
  • 1 1/2 tablespoons apple cider vinegar
  • 1 clove garlic
  • 1/4 teaspoons oregano

  • 3 cups canned tuna, drained
  • olive oil
  • 6 corn tortillas, for the tostadas
  • 1/2 cups red onion, pickled with habanero
  • lime, halved, for serving

  • For the tostadas: Place the tortillas on a flat plate and heat in the microwave for 2 minutes. After 2 minutes, flip the tortillas and heat for another 2 minutes, and you’re done!
  • Pour the achiote paste, orange juice, apple cider vinegar, garlic, oregano, salt, and pepper to taste into a blender. Blend for 2 minutes or until the ingredients are well combined. Set aside.
  • Empty the tuna into a bowl and pour the pibil sauce mixture over it, then mix well and let marinate for 6 minutes for better flavor penetration.
  • Heat the olive oil in a skillet over medium heat, pour in the tuna mixture, and cook for 3 minutes.
  • Serve the tuna tostada al pibil, decorate with pickled onion, and add lime juice.
