Crispy Tuna Tacos with Guacamole

  • 4 ancho chiles, clean, for the marinade

  • 1/2 cups onion, finely chopped, for the guacamole
  • 1/4 cups serrano chile, thinly sliced, for the guacamole

  • 1/2 cups cilantro, finely chopped, for the guacamole
  • 2 tablespoons lime juice, for the guacamole

  • 1/2 cups mango, diced, for the guacamole

  • For the marinade, roast the ancho chili, guajillo chili, cascabel chili, garlic, onion, allspice, coriander seeds, and cumin seeds; soak the chiles in hot water for 5 minutes and then blend all the ingredients with a little of the soaking water; season with salt.
  • For the tuna filling, heat a pan with oil and fry the tuna for a few minutes; add the marinade and cook for 10 minutes. Set aside.
  • For the tacos, fill the tortillas with the marinated tuna, place some toothpicks to hold the shape, and fry for 5 minutes.
  • For the guacamole, mix the onion with the chili, cilantro, avocado, lime juice, and season with salt; add the mango at the end and mix carefully.
  • Serve the tacos with guacamole, cream, and cheese, and accompany with beans and a beverage of your choice.
