Fresh Tuna and Fried Leek Toast

Delicious recipe for fresh tuna and fried leek toast. The fried leek gives it an extra special touch.

  • 1/2 cups soy sauce
  • 1 tablespoon ground cilantro, optional
  • 4 chipotle chiles, chopped or 4 tablespoons of chipotle sauce
  • 1/2 cups mayonnaise
  • 1 leek, large
  • 1/4 cups extra virgin olive oil
  • 3 Avocados from México
  • 1 package tostadas
  • 750 grams tuna steak, thick (2 large fillets)
  • 2 tablespoons black sesame seeds, optional
  • 1 tomatillo, chopped
  • dill, powder

  • For our chipotle dressing. Mix the mayonnaise, cilantro, chipotle peppers, one tablespoon of soy sauce, and the juice of 1 lime. Set aside.
  • Cut the fish into medium strips and marinate with the remaining soy sauce for a few minutes. The tuna can be seared in a pan if desired.
  • Slice the leeks very thin, fry them in olive oil until they are crispy. Drain and set aside.
  • On each toast, spread a little of the chipotle dressing, place some strips of tuna on top, add a bit of chopped tomato, two or three slices of avocado, drizzle a little olive oil, sprinkle some dill and sesame, and finally add a handful of fried leeks.
