Lettuce Tacos with Tuna Salad and Avocado

  • 2 avocados
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil
  • 2 Habanero chiles
  • 1 tablespoon fresh cilantro
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder

  • 8 envelopes Atún Marina Azul® jalapeño, (74g each)
  • 1/3 cups red onion, finely chopped
  • 1/2 cups corn kernel , yellow
  • 1/2 cups cherry tomato , quartered
  • 2 zucchinis, diced
  • 1/2 cups panela cheese , diced
  • 4 tablespoons mayonnaise
  • 2 tablespoons apple cider vinegar
  • salt and pepper
  • lettuce, leaves
  • alfalfa sprouts, for garnish
  • yellow lemon , for serving

  • Process the avocado with the lime juice, olive oil, habanero pepper, cilantro, onion powder, garlic powder, salt, and pepper until you achieve a smooth dressing. Set aside.
  • For the salad, in a bowl mix Marina Azul® jalapeño tuna with the onion, corn, tomato, zucchini, cheese, mayonnaise, vinegar, and season with salt and pepper.
  • Spread some avocado dressing on the lettuce leaves and add the tuna salad. Garnish with a little alfalfa sprout and serve with yellow lemon.
