Special Tuna a la Vízcaina

If we replace the cod with tuna in this traditional recipe for the holiday season, we turn it into the perfect recipe for any day of the week.

  • 3 cans tuna
  • 3 tomatoes, diced
  • 1/4 onions, finely chopped
  • 1 jar güero chile
  • 2 packages green olives, with or without bone
  • salt , and pepper to taste

  • Open the cans of tuna and drain; set aside for later.
  • In a skillet, add olive oil to sauté the onion; when it changes color (approximately 3 to 5 minutes), it's time to add the diced tomato, all over medium heat.
  • When the tomatoes and onion begin to have the consistency of a paste, it's time to incorporate the drained tuna and stir to combine the flavors. Once done, it's time to add the olives and chilies.
  • Let it simmer for approximately 15 minutes to allow the flavors to meld, adjusting seasoning with salt and pepper; we do this at this moment because the olives already have a bit of salt and when cooked, they release part of their flavor.
  • Cover and cook for three more minutes on low heat, and it's ready to serve.
