1/2 cups celery, finely chopped
1/2 onions, finely chopped
1/2 cups Extra Special® hearts of palm
3 Habanero chiles, finely chopped
1/2 cups mayonnaise
1/2 cups sour cream
3 tablespoons old style mustard
1 teaspoon white pepper
1/2 teaspoons cumin
1 teaspoon salt
8 pita breads
8 leaves butterhead lettuce
3 tomatoes, sliced

In a bowl, combine the tuna with the celery, onion, hearts of palm, habanero chili, mayonnaise, cream, mustard, and spices. Set aside.
Heat the pita bread for a few seconds in the microwave, cut in half, and open to form a pocket.
Fill the breads with a leaf of lettuce, slices of tomato, and the tuna mixture.
