I'll start by saying that I'm not very good in the kitchen and boiling potatoes and forming patties has never been my strong suit; they always fell apart. But I discovered that with cooked tuna they turn out perfect, and it's an ingredient I can easily consume; my grandson loves them.
Peel the potatoes and grate them. Place them in a glass container with water for 15 minutes to remove the starch and prevent oxidation.
Drain the cans of tuna and empty them into a bowl. Incorporate the previously drained grated potato.
Beat the egg, add a pinch of salt, pepper, and dried parsley to taste. Incorporate this mixture into the bowl with tuna and potato.
Heat a skillet with enough oil over medium heat. Add spoonfuls of the mixture from the bowl, flatten with a wooden spatula. Cook for 7 to 8 minutes on each side until golden brown. You can lower the heat to ensure they don't burn.
Serve on a platter and remove excess grease with a napkin.
