Delicious dish made with tuna, tomato, onion, raisins, capers, olives, and potatoes. We love cod, but since we didn't have any, I thought to try using tuna, and the result was successful. You'll love it!
Drain the tuna and set aside. Slice the tomato and onion.
Soak the almonds in a little hot water for a while to loosen the skin (carefully).
Chop the almond and the capers. Boil the potato, already cut into cubes, until it is semi-cooked.
In a large pot or skillet, heat the olive oil (not too much as it burns quickly). Add the onion and sauté until it becomes transparent, then add the tomato to season (red-orange color) while stirring, over low heat. Season.
Once seasoned, add the tuna, stirring gently, then add the raisins, olives, capers, and almonds. Adjust the salt to taste.
Drain the potatoes and add them to the stew, cover, and let the potatoes finish cooking (it should not be too dry or too watery) just with a little bit of broth. Finally, add the parsley, remove from heat, and cover.
