Wrapped Fish

This wrapped fish recipe is an ideal way to eat healthy protein, with an easy and delicious preparation. This fish is wrapped in hoja santa, giving it an incredible flavor.

  • vegetable oil
  • 1/4 onions
  • 1 clove garlic
  • 5 guajillo chiles, clean
  • 1/2 glasses water
  • 1 box Del Fuerte® tomato purée with fresh chile, 210g
  • 1 teaspoon cumin
  • 1 teaspoon oregano
  • salt
  • pepper
  • banana leaf, grilled
  • 4 red snapper fillets
  • 1 cup Oaxaca cheese, shredded
  • 1 cup red onion, fileteada
  • fresh oregano, for decoration

  • Heat a skillet over medium heat, add a bit of vegetable oil and sauté the onion, garlic, and guajillo chiles for a few minutes until the ingredients start to release their flavors, add water and Del Fuerte® fresh chili tomato puree, season with cumin, oregano, salt, and pepper, and cook for 5 more minutes.
  • Blend the above until you obtain a smooth mixture.
  • Create a packet with the banana leaf, place the fish, sauce, a bit of Oaxaca cheese, and onion; close it tightly to seal.
  • Heat a skillet over low heat, add the wrapped fish and cover the skillet, cook the fish for approximately 30 minutes.
  • Unwrap the fish and serve with fresh oregano.
