Apply a thin layer of rainbow pepper and a little salt on one side of the tuna.
Once the oil is very hot in the pan, place the side of the tuna with the layer of pepper and salt just until it is seared, turn to the other side and wait for the same result. Remove from the boiling oil and it's ready.
