  • Preheat the oven to 200° C.
  • Boil water and place the eggs in it. Let them cook for 14 minutes. After this time, take them out of the water and remove the eggshell.
  • Place a bit of oil on a baking tray. Place the bread on the tray and sprinkle the manchego cheese on top. Bake at 200° C for 5 minutes until the cheese is melted.
  • Take the bread out of the oven and place a slice of ham on top with a bit of mayonnaise. Reserve some parsley to form the mouse's whiskers; chop the remaining parsley and sprinkle it over the mayonnaise.
  • Place a slice of Emmental cheese on top. Put the boiled egg on top; if necessary, cut a small piece of the egg so that you can lay it down without it moving. Spread a bit of mayonnaise on the precooked peas and stick them on the egg to form the eyes and the little nose.
  • Place the parsley sprigs next to the nose to form the whiskers. Cut the remaining slice of cheese into a triangle shape, and with the help of a knife, make an incision at the top and insert the cheese ears.
  • You can serve it with ketchup and mustard, or if you prefer something healthier, arrange vegetables around the sandwich.
