Chicken and Vegetable Popcorn

These chicken and vegetable popcorn are a healthy and fun way for kids to eat. It is a very practical and easy recipe to make, as you have different alternatives.

  • 2 cups Aires de Campo® organic chicken leg and/or thigh, origin Veracruz
  • 1 cup carrot, in large cubes
  • 1 cup pumpkin, in large cubes
  • 1 tablespoon salt and lemon seasoning
  • 1 cup Aires de Campo® organic wheat flour, origin Puebla
  • 2 Aires de Campo® organic red eggs, smoothie, origin Morelos
  • 2 cups Natural organic amaranth Aires de Campo®, origin State of Mexico
  • vegetable oil, in spray, from safflower; just enough to prevent sticking and forming a crust.
  • 10 rainbow chard
  • crudité, jicama cucumber and carrot, for accompaniment
  • Hummus made with organic chickpeas Aires del Campo®, for accompaniment

Low
  • Cut the leg and/or thigh of organic chicken from Aires de Campo® into 3 cm cubes.
  • Place the organic chicken from Aires de Campo®, the carrot, and the zucchini in separate bowls. Season with salt and lemon seasoning and let sit for 5 minutes.
  • Coat the organic chicken cubes from Aires de Campo® seasoned with organic wheat flour from Aires de Campo®, remove the excess, and dip in beaten organic red egg from Aires de Campo®. Drain and transfer the chicken to organic natural amaranth from Aires de Campo®. You can do this process in batches until finished.
  • Place the chicken in the air fryer, spray with a little vegetable oil, and cook at 180 °C for about 25 minutes until crispy.
  • For the vegetables: place each vegetable separately in the air fryer, spray with a little vegetable oil, and cook the carrots for 10 minutes and the zucchinis for 5 minutes at 200 °C.
  • For the chard: place the whole chard leaves on the air fryer tray, brush with a little organic extra-virgin coconut oil from Aires de Campo®, and season with salt and lemon seasoning. Cook in the fryer for 40 minutes at 100 °C or until crispy.
  • Serve the chicken and vegetable popcorn accompanied by chard chips; you can also serve with crudités and Hummus made with organic chickpeas from Aires del Campo®.
