2 packages precooked rice, seasoned/prepared to your preference (it can be Spanish or Poblano style)
4 boneless chicken breast, skinless
8 slices turkey breast, or turkey ham, thick
1/4 cups red bell pepper, cut into cubes
4 slices Mozzarella cheese, cut in half

Preheat the oven to 350°F. Apply cooking spray to a 13x9 inch baking dish.
Place boiling water and seasoned rice on the platter.
Cut the chicken breasts in half lengthwise; wrap a slice of turkey breast around each piece of chicken.
Add the bell pepper to the rice.
Place the wrapped breasts over the rice and cover with aluminum foil.
Bake for 40 to 45 minutes; uncovered, bake approximately 10 more minutes or until the liquid is absorbed and the chicken juices run clear when cutting the thicker parts.
Cover each chicken breast with cheese. Bake uncovered for 3 to 4 minutes or until the cheese melts.
