Chicken-Stuffed Ham Rolls

These ham rolls covered with mozzarella cheese are filled with chicken. They are served on a bed of rice.

  • 4 cups water, boiling
  • 2 packages precooked rice, seasoned/prepared to your preference (it can be Spanish or Poblano style)
  • 4 boneless chicken breast, skinless
  • 8 slices turkey breast, or turkey ham, thick
  • 1/4 cups red bell pepper, cut into cubes
  • 4 slices Mozzarella cheese, cut in half

  • Preheat the oven to 350°F. Apply cooking spray to a 13x9 inch baking dish.
  • Place boiling water and seasoned rice on the platter.
  • Cut the chicken breasts in half lengthwise; wrap a slice of turkey breast around each piece of chicken.
  • Add the bell pepper to the rice.
  • Place the wrapped breasts over the rice and cover with aluminum foil.
  • Bake for 40 to 45 minutes; uncovered, bake approximately 10 more minutes or until the liquid is absorbed and the chicken juices run clear when cutting the thicker parts.
  • Cover each chicken breast with cheese. Bake uncovered for 3 to 4 minutes or until the cheese melts.
