Cut both ends of the beets. Wash and scrub them until they are clean. Place in a Pressure Cooker® and cover with water.
Close the Pressure Cooker® and attach the pressure regulator, place it on the stove over high heat, when steam starts to escape, reduce the heat to medium and cook for 35 minutes.
Remove the Pressure Cooker® from the heat, let cool, remove the pressure regulator, and open the Pressure Cooker®.
Peel the beets by rubbing them between your hands. The beets should feel soft when poked with a fork. Let cool.
Transfer to a food processor and blend until smooth.
