In an Express® Pressure Cooker over high heat place the oil. Add the chicken, 2 cups of water, salt, and carrot.
Close the Express® Pressure Cooker and put the pressure regulator on it, place it on the stove with high heat, when the steam comes out reduce the heat to medium and cook for 35 minutes.
Remove the pot from the heat, let it cool, remove the pressure regulator, open the Express® Pressure Cooker and voila!
Transfer to a food processor until it has a thick consistency.
