Lion's Mane Pasta

  • 250 grams fusilli pasta
  • 1 kilo red beefsteak tomato, ripe

  • Cook the pasta according to the package instructions. Drain and set aside.
  • Sauté the finely chopped onion and garlic in a pan with hot oil.
  • Add the ground meat and cook until it changes color. Using a wooden spatula, break up the meat to prevent large clumps from forming.
  • For the sauce: Boil the tomatoes and blend with a piece of onion and garlic. Season with salt and pepper. Sprinkle with oregano and cook until it changes color.
  • Strain the sauce and mix it with the cooked pasta.
  • On a large plate, place a slice of Manchego cheese, and cover with the pasta to form a circle.
  • You can use green or black olives for the eyes, or some raisins.
  • Cut a triangle of tomato to make the nose, and strips for the whiskers.
