  • 8 eggs
  • 1/4 cups milk
  • salt and pepper
  • 1/2 teaspoons onion powder
  • 1/2 teaspoons garlic powder
  • 1/2 cups bacon, fried, in small cubes
  • 1/2 cups spinach, in thin strips
  • 1 cup tomato , in small cubes
  • 1/4 cups Manchego cheese, grated

  • Mix the egg, milk, salt, pepper, onion powder, and garlic powder until combined.
  • Grease a cupcake mold and add bacon, spinach, tomato, and cheese. Pour a bit of the egg mixture until filling ¾ of the capacity of each mold.
  • Bake at 180°C for 15 to 20 minutes. Serve and accompany with toast.
