Spread mayonnaise on one slice of bread, add tomato, lettuce, manchego cheese, and a slice of mortadella. With the help of a round cutter, make a hole in the slice of bread that will be used to cover the sandwich.
Using the same cutter that was used for the bread, cut a circle of mortadella and with smaller cutters, cut smaller circles for the snout, then cut semicircles for the ears. Assemble the little pigs with the mortadella inside the hollow bread.
Decorate the little pigs with nori seaweed, place in the lunchbox, and accompany the mortadella sandwich with your favorite Danonino®.
