In a large bowl, place the yeast and sugar and mix until it is liquid.
Heat 1 cup of milk until warm and combine it with the yeast mixture. Add 1/2 cup of flour. Mix, cover, and let it rest for 15 minutes.
Add the margarine, eggs, remaining milk, cornstarch, and salt. Mix with a spoon until it becomes pasty.
Gradually add the remaining flour and knead until it comes away from your hands.
Flour a dry surface, place the dough, and knead well until smooth. Cover and let it rest for 1 hour or until it doubles in size.
In a bowl, mix the basil, cheese, and chorizo.
Grease 2 large pizza baking dishes (35cm in diameter).
Divide the dough into 100 portions. Distribute the filling among the dough portions and shape them into balls.
Place 50 balls in one of the reserved baking dishes, placing them side by side. Repeat the process with the remaining balls in the other reserved baking dish. Cover and let it rest for 30 minutes or until it doubles in size.
Preheat the oven to medium temperature (180°C).
Brush them with the egg yolk and bake for 25 minutes or until golden.
Remove from the oven, cover with sauce, and sprinkle mozzarella cheese. Return to the oven for 10 more minutes or until the cheese melts. Serve immediately.
