Potato and Sausage Quesadillas

This quesadilla recipe can be a complete meal ideal for dinner time, as it contains all food groups. It is a very common dish in Mexican homes, and it is easy to prepare.

  • 2 tablespoons vegetable oil
  • 1 cup onion, finely chopped
  • 6 Turkey Fud® Sausages, cut into rounds
  • 1 1/2 cups potato , cooked, diced

  • 2 cups Oaxaca cheese, shredded
  • 1 cup red onion, sliced
  • 1 tablespoon oregano
  • 3 tablespoons lemon juice

  • Heat vegetable oil in a pan and sauté the onion with Turkey Sausage Fud® for a few minutes, add the potato and sauté for a few more minutes (8 minutes total), remove and set aside.
  • In a skillet over medium heat, warm the corn tortillas, fill them with cheese and the Turkey Sausage Fud® filling, and remove from heat when the cheese melts.
  • For the onions, mix the red onion with oregano, lime juice, and salt. Marinate for a few minutes and set aside.
  • Garnish the quesadillas with cream, lettuce, cheese, and pickled onions.
