Potato balls for lunch

These potato balls are an easy lunch recipe to make.

  • 1 tablespoon vegetable oil
  • 1/2 cups onion, finely chopped
  • 500 grams ground beef
  • 1 teaspoon garlic powder
  • 1 cup carrot, in very small cubes
  • 1 tablespoon parsley
  • salt
  • 3 cups potato, cooked and in medium cubes
  • 1 tablespoon Parmesan cheese
  • salt
  • 1 cup Manchego cheese, in small cubes
  • 2 eggs, for breading the balls
  • 1 cup breadcrumbs, for breading the balls
  • vegetable oil
  • ketchup, for accompaniment

  • Heat the oil in a skillet over medium heat, add the onion, and cook for 2 minutes. Incorporate the meat, garlic powder, and carrot, and cook for 10 minutes. Add the parsley and season with salt. Set aside.
  • Mash the potato with a fork until it becomes a puree and add the parmesan cheese, salt, and meat. Mix and form balls the size of your hand, make a hole, add one or two cubes of cheese. Close very well.
  • Dip each ball in the egg and then coat with breadcrumbs.
  • Fry the potato balls one by one in a pot with enough oil over medium heat for 5 minutes or until golden brown. Remove and place on a plate lined with paper towels.
  • Serve the lunch in a baking dish and accompany with ketchup.
