Potato Nuggets with Cheese

Kids will love these delicious potato nuggets with cheese, as they will become their favorites for snack time or simply for cravings, since they are crispy and golden. They are finger-licking good!

  • 6 potatoes, peeled and cooked, cut into medium cubes
  • 3 tablespoons cornstarch, for the potato mixture
  • 2 egg yolks, for the potato mixture
  • 1/2 cups breadcrumbs, for the potato mixture
  • salt, for seasoning
  • 2 cups Manchego cheese, in small cubes
  • 1 cup wheat flour, for breading
  • 2 eggs, beaten eggs, for breading
  • 2 cups breadcrumbs, for breading
  • vegetable oil, for frying
  • ketchup, for accompaniment
  • crudité, cucumber and carrot, for accompaniment

  • Place the cooked potatoes in a bowl and season with salt, then mash until you get a puree, but don't worry if the potato has some slightly large pieces. Once you have the puree, add the cornstarch, egg yolks, breadcrumbs, and a little more salt. Mix with the help of a plastic spatula until you obtain a mixture that is easy to handle.
  • Take a portion of the mixture and shape it into rectangles about 4 centimeters long with your hands, hollow out with your finger and fill with cheese, close the rectangle and shape the nuggets by pressing a little with your hand. Repeat the process until you finish with the mixture.
  • Coat the potato nuggets in flour, then cover with the beaten egg and finally coat with breadcrumbs. Fry over medium-low heat for 6 minutes on each side, making sure the oil doesn't get too hot so the nuggets don't brown too much. Once ready, drain on paper towels.
  • Serve the potato nuggets with cheese on a flat plate and accompany with ketchup and vegetable crudités.
