  • 2 tablespoons vegetable oil
  • 1 cup chicken breast
  • 1/2 cups carrot
  • 1/4 cups broccoli
  • 1/2 cups peas
  • 1/2 cups red cabbage
  • 1/2 cups yellow corn
  • 2 cups white rice
  • salt and pepper
  • Low sodium soy sauce

  • Heat the vegetable oil in a pan over medium heat and sauté the chicken for 3 minutes. Add the carrots and cook for 3 minutes.
  • Add the broccoli, peas, red cabbage, and yellow corn. Sauté for 3 more minutes.
  • Add the rice, season with salt and pepper, and cook for 3 more minutes or until all ingredients are well cooked.
  • Serve the rice in bowls and add a little low-sodium soy sauce.
