Heat a non-stick skillet and melt some butter.
Make a lengthwise cut on the sausage and place a portion of cheese inside it. Wrap it with one or two spinach leaves.
Pour a portion of pancake batter onto the hot skillet and shape it into a circle.
Hold the skillet by the handle and lift it to swirl and distribute the excess batter to the sides, achieving a thinner pancake.
As soon as you notice bubbles forming in the batter you poured onto the skillet, place the sausage at one end and gradually peel the pancake so you can wrap the sausage completely, making a full turn.
Cover the sausages to allow the batter to cook completely.
Cut each sausage into 3 or 4 portions.
