Spinach Egg Rolls

These spinach egg rolls are a very nutritious breakfast for children. Moreover, they are easy to make and include all food groups, making them ideal for little ones!

  • 4 eggs
  • 1/2 cups low-fat milk, low in fat
  • 1/2 teaspoons salt
  • 1 pinch pepper
  • 2 tablespoons olive oil, for cooking
  • 1 cup spinach, leaves, without stems
  • 5 slices panela cheese, into slices
  • mix of vegetables, carrot and celery, in sticks, for garnish

  • In a bowl, mix the egg, milk, salt, and pepper.
  • Heat a large skillet over medium heat and pour in the oil and the egg mixture; a thin layer should form. Cook for a few seconds and carefully flip. Cook for 10 more seconds and remove from the skillet.
  • Transfer to a board and fill with spinach as stretched as possible. Place the slices of panela cheese on top and roll the entire egg tortilla.
  • Cut the spinach egg rolls into 2 cm thick pieces.
  • Serve the rolls with vegetables.
