These spinach egg rolls are a very nutritious breakfast for children. Moreover, they are easy to make and include all food groups, making them ideal for little ones!

In a bowl, mix the egg, milk, salt, and pepper.
Heat a large skillet over medium heat and pour in the oil and the egg mixture; a thin layer should form. Cook for a few seconds and carefully flip. Cook for 10 more seconds and remove from the skillet.
Transfer to a board and fill with spinach as stretched as possible. Place the slices of panela cheese on top and roll the entire egg tortilla.
Cut the spinach egg rolls into 2 cm thick pieces.
Serve the rolls with vegetables.
