Vegetable and Cottage Sandwich

A simple, light, and delicious vegetarian sandwich. I invite you to make it and enjoy its flavor as much as I do; kids love it.

  • 4 leaves lettuce, washed and disinfected
  • 4 slices avocado
  • 4 slices red beefsteak tomato
  • 1/2 bell peppers, julienned
  • 1/2 cucumbers, sliced, well drained
  • 4 tablespoons cottage cheese , drained
  • salt
  • 4 slices sliced bread , whole grain or multigrain
  • 2 tablespoons mustard
  • 1 tablespoon vinegar
  • 2 tablespoons olive oil
  • pepper

  • In a small plate, mix the oil and vinegar, season with salt and pepper
  • Warm the bread slightly and spread it with mustard
  • Place the vegetables on the bread and add salt and pepper, the cottage cheese
  • Close with the other slice of bread and enjoy
