Vegetable Patties

  • 2 potatoes, grated and drained
  • 2 carrots, grated and drained
  • 2 zucchinis, grated and drained
  • 2 eggs
  • vegetable oil, for frying
  • salt
  • pepper

  • In a bowl, beat the egg and season.
  • Add the vegetables and season with salt and pepper.
  • Heat a pan with enough oil for a semi-deep fry.
  • Form patties with a tablespoon and place them in the hot oil to brown on both sides.
  • Place the patties on absorbent paper.
  • Serve them with a bit of puree.
