In a bowl, mix the tuna, vegetables, and mayonnaise until combined. Set aside.
Place a couple of carrot slices together, fill with tuna, and roll up. Repeat this process with cucumber and jicama.
Arrange the vegetable rolls on lettuce leaves, and decorate with cheese, ham, and balsamic reduction.
Serve the vegetable rolls in the lunchbox and accompany with fruits, mini quesadillas, and Danonino®.
